Recipes For A Diabetic


BAKED APPLES

Servings: 4
4 Apples
1 tsp butter
2 tablets splenda sweetener, powdered or 2 sachets
¼ tsp grated orange rind
½ tsp cinnamon powder
¼ tsp clove powder
1 Tbsp blanched, peeled and chopped almonds
1 Tbsp black currants
¼ tsp vanilla essence

HEAT oven to 150 degrees Centigrade (300 degree Fahrenheit)

WASH and core apples. Peel skin from about ½ inch off the tops of the apples.

MIX butter, sweetener, orange rind, spice powders, almonds, black currants and vanilla in a small bowl. Divide into 4 portions.

STUFF apples with filling, pressing it down with the back of a teaspoon.

POUR water into a baking dish to a depth of ½ inch. Arrange stuffed apples in water and bake in preheated oven for about 25 minutes till soft.

SERVE hot or cold.
